Ring in Spring with Heirloom Carrot Fries

If you’re looking for a colorful party appetizer or delicious snack to say hello to spring, these baked heirloom carrot fries are absolutely gorgeous and delicious. Make sure you get small, thin carrots so that they bake evenly. Serve them as is, or with a delicious herb oil drizzle!

Baked Heirloom Carrot Fries

Prep: 5 mins

Cook: 30 mins

Total Time: 35 mins

Ingredients

1 bunch of colorful heirloom carrots (or regular)

1-2 tbs. olive oil

salt

TOPPINGS (optional):

Herb oil

1 tbs. olive oil

1-2 tbs. minced fresh parsley (can substitute cilantro)

Crushed walnuts

Instructions

Preheat oven to 400 degrees.

Cut the stems off the carrots, leaving about 1 inch of green on top. Slice each carrot into two equal halves, lengthwise.

Brush with oil and lay out on a baking sheet. Sprinkle lightly with salt.

Bake for appx. 25-30 minutes. (more for thicker carrots, less for thinner ones).

Optional: Meanwhile, in a small bowl, mix fresh parsley and oil. When carrots are finished baking, put them on a serving dish in a straight line, and drizzle one line of herb oil across the middle, and sprinkle with crushed walnuts.

Serve.
